La Casa Cosme Palacio
Location
Laguardia, Spain
Set among vineyards below the medieval walled town of Laguardia, this restored 1894 winery estate features rustic stonework, vaulted roofs with terracotta tiles and underground cellars with century-old winemaking vats. The invitation-only property is reserved exclusively for Nat Hab guests during their stay. In the common areas, rustic stone walls, arched corridors and understated modern furnishings create a cozy atmosphere, while the former stables house a museum of traditional winemaking equipment.
Guest rooms are decorated in neutral tones and feature original stone walls and shuttered windows overlooking the countryside. King, queen and double beds are available. All rooms have air conditioning and Wi-Fi; en suite bathrooms offer premium toiletries and either showers or bathtubs.
Using locally sourced ingredients, a private chef prepares dishes such as monkfish and fig carpaccio with goat cheese and sea bass with potatoes and confit peppers. Guests can sample wine directly from barrels, explore the vineyards or join in the fieldwork. On a sunny garden terrace, a long infinity pool overlooks the Ebro Valley and vineyards. Sustainability initiatives include organic vineyard practices, cover crops and AI-assisted analysis of soil health and climate data. The kitchen sources olive oil from the estate’s centuries-old olive trees and honey from its beehives.
