Domaine du Castellas
Location
Sivergues, France
Tucked into the valleys of the Grand Luberon, this restored 1720 farmstead sits on more than 250 acres of grassland and oak forest, with views toward the Alps and Ardeche. Cut-stone buildings with shuttered windows, arched passageways and weathered tile roofs spread across the hillside. Guests can milk free-range goats, harvest vegetables and collect eggs, while the living room’s stone walls and rough-hewn beams retain the farmstead’s historic character.
Rooms are furnished in a neutral, minimalist palette, mixing antiques with contemporary pieces. Rooms may have tile or wood floors, exposed beams, desks, couches or outdoor seating; all include Wi-Fi, air conditioning, a kitchenette and en suite bathrooms.
The chef builds menus around the morning harvest, serving communal meals at long wooden tables. Dishes might include warm goat cheese tartines, farm-grown tomatoes with burrata or roast chicken with garden vegetables. In hillside caves once used as sheep pens, the spa offers Ayurvedic massages, while on the terrace, the stone-lined swimming pool and sun loungers overlook grassy hills and the 18th-century hamlet. Saunas, Finnish baths, a billiards room, wine cellar and outdoor yoga are also available.
The farm supplies vegetables, herbs, eggs and wild-lavender honey, while sustainability efforts include a water-conscious garden planted with drought-tolerant seeds, composting, recycling and goat grazing for natural wildfire mitigation.
