For our first three nights we stay at Posada Rancho Cerro Largo, an ecolodge featuring individual cabanas with sweeping views of the Pacific Ocean. Highly sustainable, the cabanas are perched along the side of a high cliff and are cooled by ceiling fans and sea breezes, and each has a detached private bath with dry cedar-chip toilet and bucket shower.
